Shake that bag!!

Cracklins, also known as pork rinds or chicharrones, originated in Spain and were brought to the Americas by 16th century Spanish explorers.
The evolution of the cajun “graton or crackling” evolved from early Louisiana pig farming and utilizing the whole pig to feed the family after the annual “hog killing” or “boucherie”.Unused pig parts led to the the final “double fried” seasoned product.Fried skin and fat.Lard was used for frying and baking.
Nowadays it’s an expensive delicacy.

Cafe Vermilionville, early 1900’s. Though the date of its construction is not known, the Vermilion Inn is believed to have been in the early 1800s. During the region’s early history, Native Americans and traders navigated the Bayou Vermilion to a small settlement called Petit Manchac, located near today’s Pinhook Bridge. The house has changed ownership many times over the years and has included the Girard and Heymann families. Most recently, the property has been a string of restaurants, including Maison Acadienne, Judge Roy Bean’s Saloon, and Café Vermilionville. [Colorized]
