First, for this early in the season with the size of the crawfish and their delicate shells, I don’t actually “boil” them specifically.

4 lb bag of Swamp Dust or LA Products dry crawfish boil

Medium bottle Zats liquid crab boil

Dump a small can of a mixed Cajun seasoning you like. Dump a healthy amount of cayenne pepper and an entire small bottle of Louisiana Hot Sauce. Squeeze some lemon. I squeezed some oranges too because we have more in the house than we’re going to eat before we head to the Iota T Mamou Mardi Gras.

Get pot to rolling boil and let seasonings mix a while. Put a sack of crawfish in, then turn off the fire. Add some more liquid boil while they’re soaking. I soaked these for probably 45-50 minutes before I pulled them out. Peeled perfectly and were tasty.

I love eating them if it were not so hard to eat them. The extraction of the crab meat is a job.
